Ingredients 

Main Ingredients

  • 1 cup Red curry paste
  • 2 tablespoon Miso paste
  • 2 cups Mixed vegetables (carrots, bell peppers, broccoli) Chopped
  • 1 cup Coconut milk
  • 1 cup Cooked rice
  • 1 tablespoon Soy sauce
  • 1 tablespoon Olive oil

Instructions 

  1. 1. Heat olive oil in a saucepan over medium heat.
  2. 2. Add red curry paste and cook for 2 minutes.
  3. 3. Stir in coconut milk and bring to a simmer.
  4. 4. Add miso paste and soy sauce, mix well.
  5. 5. Add mixed vegetables and cook until tender, about 10 minutes.
  6. 6. Serve over cooked rice.
