Main Ingredients
- 1 cup Red curry paste
- 2 tablespoon Miso paste
- 2 cups Mixed vegetables (carrots, bell peppers, broccoli) Chopped
- 1 cup Coconut milk
- 1 cup Cooked rice
- 1 tablespoon Soy sauce
- 1 tablespoon Olive oil
1. Heat olive oil in a saucepan over medium heat.
2. Add red curry paste and cook for 2 minutes.
3. Stir in coconut milk and bring to a simmer.
4. Add miso paste and soy sauce, mix well.
5. Add mixed vegetables and cook until tender, about 10 minutes.
6. Serve over cooked rice.
