Ingredients 

Vegetables

  • 1 large Eggplant diced
  • 1 large Zucchini diced
  • 1 large Bell Pepper diced
  • 1 large Onion diced
  • 4 cloves Garlic minced
  • 4 large Tomatoes diced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Basil

Instructions 

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a large skillet, heat the olive oil over medium heat.
  3. 3. Add the diced onion and garlic, and sauté until they are soft.
  4. 4. Add the eggplant, zucchini, and bell pepper. Cook until they start to soften.
  5. 5. Add the tomatoes, salt, pepper, thyme, and basil. Stir well.
  6. 6. Transfer the mixture to an oven-safe dish and bake for 30 minutes.
  7. 7. Serve hot.
