Ingredients 

Crust

  • 1.5 cups All-purpose flour
  • 0.5 cup Unsalted butter cold, cubed
  • 0.25 cup Sugar
  • 1 unit Egg yolk
  • 1 tablespoon Cold water

Filling

  • 1 cup Sugar
  • 3 unit Eggs
  • 0.5 cup Lemon juice freshly squeezed
  • 1 tablespoon Lemon zest grated
  • 0.5 cup Heavy cream
  • 1 cup Raspberries fresh

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and sugar. Cut in butter until mixture resembles coarse crumbs. Add egg yolk and cold water, mix until dough forms.
  3. Press dough into a tart pan. Bake for 15 minutes or until golden. Let cool.
  4. In another bowl, whisk together sugar, eggs, lemon juice, and lemon zest. Stir in heavy cream.
  5. Pour filling into cooled crust. Bake for 15 minutes or until set. Let cool completely.
  6. Top with fresh raspberries before serving.
