Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 jalapeño, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup cilantro, chopped

Instructions 

  1. Heat the olive oil in a saucepan over medium heat.
  2. Add the chopped onion and cook until soft, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the diced tomatoes, chopped jalapeño, ground cumin, salt, and black pepper. Bring to a simmer and cook for 10-15 minutes.
  5. Remove from heat and let cool slightly. Blend the mixture until smooth.
  6. Stir in the chopped cilantro before serving.
