Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 jalapeño, chopped
- 1 teaspoon ground cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup cilantro, chopped
Heat the olive oil in a saucepan over medium heat.
Add the chopped onion and cook until soft, about 5 minutes.
Stir in the minced garlic and cook for another minute.
Add the diced tomatoes, chopped jalapeño, ground cumin, salt, and black pepper. Bring to a simmer and cook for 10-15 minutes.
Remove from heat and let cool slightly. Blend the mixture until smooth.
Stir in the chopped cilantro before serving.
