Rainbow Chard & Wheat Berries Recipe

- 1 cup wheat berries rinsed
- 1 bunch rainbow chard chopped
- 2 tablespoon olive oil
- 1 medium onion diced
- 2 cloves garlic minced
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 cup vegetable broth
1. Cook the wheat berries: In a large pot, bring 4 cups of water to a boil. Add the wheat berries and reduce to a simmer. Cook for 45 minutes or until tender. Drain and set aside.
2. Prepare the chard: While the wheat berries are cooking, heat the olive oil in a skillet over medium heat. Add the onion and cook until translucent, about 5 minutes. Add the garlic and cook for another minute.
3. Add the chard: Stir in the chopped chard and cook until wilted, about 3-4 minutes. Season with salt and black pepper.
4. Combine and serve: Add the cooked wheat berries and vegetable broth to the skillet. Stir to combine and cook for another 5 minutes until heated through. Serve warm.
