1. Rinse the quinoa under cold water.
2. In a saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
3. While the quinoa is cooking, chop the rainbow chard, halve the cherry tomatoes, dice the cucumber, and shred the carrots.
4. In a mixing bowl, combine the olive oil, lemon juice, salt, and black pepper to make the dressing.
5. Once the quinoa is done, fluff it with a fork and let it cool slightly.
6. In a large bowl, combine the quinoa, rainbow chard, cherry tomatoes, cucumber, and carrots. Drizzle with the dressing and toss to combine.
7. Serve immediately or refrigerate for later.
