Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 cup broccoli florets
  • 1 cup bell pepper sliced
  • 1 cup carrot sliced
  • 2 cloves garlic minced
  • 2 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger grated
  • 1 tablespoon sesame seeds optional

Instructions 

  1. 1. Cook quinoa: In a medium pot, bring quinoa and water to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork.
  2. 2. Heat olive oil in a wok over medium-high heat. Add garlic and ginger, and sauté for 1 minute.
  3. 3. Add broccoli, bell pepper, and carrot. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  4. 4. Stir in cooked quinoa, soy sauce, and sesame oil. Cook for another 2-3 minutes, stirring frequently.
  5. 5. Serve hot, garnished with sesame seeds if desired.
