Ingredients 

Main Ingredients

  • 4 Bell Peppers tops cut off, seeds removed
  • 1 cup Quinoa cooked
  • 1 cup Black Beans rinsed and drained
  • 1 cup Corn frozen or canned
  • 1 Onion diced
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 cup Tomato Sauce
  • 1 cup Cheese shredded, optional
  • to taste Salt and Pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine cooked quinoa, black beans, corn, onion, garlic, cumin, paprika, tomato sauce, salt, and pepper.
  3. Stuff each bell pepper with the quinoa mixture and place in a baking dish.
  4. Cover with foil and bake for 30 minutes.
  5. Remove foil, sprinkle with cheese if using, and bake for an additional 15 minutes.
  6. Serve hot and enjoy!
