Quinoa Stuffed Bell Peppers

Main Ingredients
- 4 Bell Peppers tops cut off, seeds removed
- 1 cup Quinoa cooked
- 1 cup Black Beans rinsed and drained
- 1 cup Corn frozen or canned
- 1 Onion diced
- 2 cloves Garlic minced
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 cup Tomato Sauce
- 1 cup Cheese shredded, optional
- to taste Salt and Pepper
Preheat oven to 375°F (190°C).
In a mixing bowl, combine cooked quinoa, black beans, corn, onion, garlic, cumin, paprika, tomato sauce, salt, and pepper.
Stuff each bell pepper with the quinoa mixture and place in a baking dish.
Cover with foil and bake for 30 minutes.
Remove foil, sprinkle with cheese if using, and bake for an additional 15 minutes.
Serve hot and enjoy!
