Ingredients 

Main Ingredients

  • 1 cup quinoa
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup mushrooms, sliced
  • ½ cup parmesan cheese, grated
  • to taste salt and pepper

Instructions 

  1. Rinse quinoa under cold water.
  2. Heat olive oil in a saucepan over medium heat. Add onion and garlic, cook until softened.
  3. Add quinoa and cook for 2 minutes, stirring frequently.
  4. Gradually add vegetable broth, one cup at a time, stirring constantly until liquid is absorbed before adding more.
  5. Stir in mushrooms and cook until tender.
  6. Remove from heat and stir in parmesan cheese. Season with salt and pepper to taste.
