Ingredients 

Main Ingredients

  • 1 cup cooked quinoa
  • 1 cup shredded cheese cheddar or your choice
  • 1 tortilla large
  • ½ cup black beans rinsed and drained
  • ½ cup corn kernels fresh or frozen
  • 1 avocado sliced
  • 1 lime cut into wedges

Instructions 

  1. 1. Heat a skillet over medium heat.
  2. 2. Place a tortilla in the skillet and sprinkle half of the cheese over one half of the tortilla.
  3. 3. Add quinoa, black beans, corn, and avocado slices on top of the cheese.
  4. 4. Sprinkle the remaining cheese over the filling and fold the tortilla in half.
  5. 5. Cook until the tortilla is golden brown and the cheese is melted, about 3-4 minutes per side.
  6. 6. Remove from the skillet and cut into wedges. Serve with lime wedges.
