Ingredients 

Main Ingredients

  • 1 cup Quinoa
  • 2 cups Vegetable Broth
  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • ¼ cup Chopped Parsley

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, heat the olive oil over medium heat.
  3. 3. Add the chopped onion and garlic, and sauté until translucent.
  4. 4. Add the quinoa and cook for a few minutes, stirring frequently.
  5. 5. Pour in the vegetable broth, add salt and pepper, and bring to a boil.
  6. 6. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is tender and the liquid is absorbed.
  7. 7. Fluff with a fork and stir in chopped parsley before serving.
