Ingredients 

Main Ingredients

  • 1 cup Quinoa cooked
  • 2 cups Kale chopped
  • 1 cup Bell Peppers chopped
  • 1 cup Shredded Cheese
  • 8 pieces Tortillas
  • 1 tablespoon Olive Oil

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat.
  2. 2. Add chopped bell peppers and kale. Sauté until softened.
  3. 3. Mix in cooked quinoa and cook for another 2-3 minutes.
  4. 4. Place a tortilla in the skillet, add a layer of the quinoa mixture, sprinkle with cheese, and top with another tortilla.
  5. 5. Cook until the bottom tortilla is golden brown, then flip and cook the other side.
  6. 6. Repeat with remaining tortillas and filling.
  7. 7. Cut into wedges and serve warm.
