Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 bunch kale chopped
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion finely chopped
  • ¼ cup feta cheese crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Rinse quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. 3. Remove from heat and let quinoa cool.
  4. 4. In a large mixing bowl, combine quinoa, kale, cherry tomatoes, red onion, and feta cheese.
  5. 5. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  6. 6. Pour dressing over salad and toss to combine.
  7. 7. Serve immediately or refrigerate for later.
