Ingredients

  • 1 cup cooked quinoa
  • 1 cup rolled oats
  • ½ cup peanut butter
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips
  • ¼ cup chopped nuts optional

Instructions 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cooked quinoa, rolled oats, peanut butter, honey, and vanilla extract. Mix well.
  3. Fold in the chocolate chips and chopped nuts (if using).
  4. Scoop out tablespoon-sized portions of the mixture and place them on the prepared baking sheet. Flatten each cookie slightly with the back of a spoon.
  5. Bake for 15-20 minutes, or until the cookies are golden brown. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
