Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 can black beans drained and rinsed
  • 1 cup corn cooked
  • 1 cup cherry tomatoes halved
  • 1 medium red bell pepper diced
  • 1 small red onion diced
  • ¼ cup cilantro chopped
  • ¼ cup lime juice freshly squeezed
  • 2 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. 1. In a saucepan, bring quinoa and water to a boil. Reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit for 5 minutes, then fluff with a fork.
  2. 2. In a large mixing bowl, combine cooked quinoa, black beans, corn, cherry tomatoes, red bell pepper, red onion, and cilantro.
  3. 3. In a small bowl, whisk together lime juice, olive oil, ground cumin, salt, and black pepper. Pour over the quinoa mixture and toss to combine.
  4. 4. Serve immediately or refrigerate for later. Enjoy!
