Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 avocado diced
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion finely chopped
  • ¼ cup cilantro chopped
  • 2 tablespoon olive oil
  • 1 lime juiced
  • to taste salt and pepper

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a pot, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  3. 3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  4. 4. In a large mixing bowl, combine the cooked quinoa, avocado, cherry tomatoes, red onion, and cilantro.
  5. 5. Drizzle with olive oil and lime juice. Season with salt and pepper to taste. Toss gently to combine.
  6. 6. Serve immediately or chill in the fridge for later.
