Main Ingredients
- 4 Bell peppers tops cut off and seeds removed
- 1 cup Quinoa cooked
- 1 cup Black beans rinsed and drained
- 1 cup Corn canned or frozen
- 1 cup Diced tomatoes canned or fresh
- 1 teaspoon Cumin
- 1 teaspoon Chili powder
- to taste Salt and pepper
- 1 cup Shredded cheese optional
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
Top with shredded cheese if desired.
Bake for 25-30 minutes, until the peppers are tender and the cheese is melted.
Serve hot and enjoy!
