Ingredients

  • 4 bell peppers any color
  • 1 cup quinoa cooked
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup cheese shredded, optional

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a mixing bowl, combine the cooked quinoa, black beans, corn, salsa, cumin, and chili powder.
  4. Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
  5. Top with shredded cheese if using.
  6. Bake for 30 minutes, or until the peppers are tender and the filling is heated through.
