Quinoa and Black Bean Stuffed Peppers

- 4 bell peppers any color
- 1 cup quinoa cooked
- 1 can black beans drained and rinsed
- 1 cup corn frozen or canned
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup cheese shredded, optional
Preheat your oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds.
In a mixing bowl, combine the cooked quinoa, black beans, corn, salsa, cumin, and chili powder.
Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
Top with shredded cheese if using.
Bake for 30 minutes, or until the peppers are tender and the filling is heated through.
