Ingredients

  • 4 large carrots peeled and cut into sticks
  • 1 cup vinegar white or apple cider
  • 1 cup water
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1 teaspoon mustard seeds
  • 1 teaspoon peppercorns
  • 2 cloves garlic sliced

Instructions 

  1. 1. In a saucepan, combine vinegar, water, sugar, salt, mustard seeds, and peppercorns. Bring to a boil.
  2. 2. Place carrot sticks and garlic in a jar.
  3. 3. Pour the hot vinegar mixture over the carrots, making sure they are fully submerged.
  4. 4. Let cool to room temperature, then refrigerate for at least 1 hour before serving.
