Ingredients

  • 1 cup Butter softened
  • 1 cup Brown Sugar packed
  • ½ cup Granulated Sugar
  • 1 cup Pumpkin Puree
  • 1 teaspoon Vanilla Extract
  • 2 Eggs
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 2 teaspoon Pumpkin Pie Spice
  • 3 cups Old-Fashioned Oats
  • 1 cup Raisins optional

Instructions 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth. Beat in the pumpkin puree, eggs, and vanilla until well blended.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice. Gradually add the dry ingredients to the pumpkin mixture and mix until just combined. Stir in the oats and raisins if using.
  4. Drop dough by rounded tablespoonfuls onto the prepared baking sheets. Flatten slightly with the back of a spoon.
  5. Bake for 12-15 minutes, or until cookies are lightly browned and set. Cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
