Ingredients 

Main Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground ginger
  • ½ teaspoon Ground nutmeg
  • ½ teaspoon Ground cloves
  • ½ teaspoon Salt
  • ½ cup Unsalted butter, softened
  • ½ cup Granulated sugar
  • ½ cup Brown sugar, packed
  • 1 cup Pumpkin puree
  • 1 large Egg
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.
  3. In a large bowl, beat the butter and sugars together until light and fluffy. Add the pumpkin puree, egg, and vanilla extract, and beat until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
