Pumpkin Sage Risotto

Ingredients 

Main Ingredients

  • 1 cup Arborio rice
  • 2 tablespoon Olive oil
  • 1 small Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 cup Pumpkin puree
  • 4 cups Vegetable broth kept warm
  • ½ cup Parmesan cheese, grated
  • 1 tablespoon Fresh sage, chopped
  • to taste Salt and pepper

Instructions 

  1. Heat the olive oil in a saucepan over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the Arborio rice and cook, stirring constantly, for 2-3 minutes until the rice is lightly toasted.
  3. Stir in the pumpkin puree and cook for another minute.
  4. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding more broth. Continue this process until the rice is creamy and cooked through, about 20-25 minutes.
  5. Stir in the Parmesan cheese and fresh sage. Season with salt and pepper to taste.
  6. Serve immediately, garnished with additional Parmesan cheese and sage if desired.
