Ingredients

  • 1 cup Pumpkin puree
  • 1 cup Milk
  • 1 large Egg
  • 2 tablespoon Butter, melted
  • 1 cup All-purpose flour
  • 2 tablespoon Sugar
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • ½ teaspoon Ground ginger
  • ¼ teaspoon Ground nutmeg

Instructions 

  1. In a large bowl, whisk together the pumpkin puree, milk, egg, and melted butter.
  2. In another bowl, mix the flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. Combine the wet and dry ingredients, stirring until just blended.
  4. Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately ¼ cup for each pancake. Brown on both sides and serve hot.
