Ingredients 

Main Ingredients

  • 1 can Coconut Milk
  • 2 cups Pumpkin, cubed
  • 1 tablespoon Curry Powder
  • 1 teaspoon Salt
  • 1 tablespoon Olive Oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 inch Ginger, minced

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and ginger, and cook for another minute.
  4. Add the curry powder and salt, and stir well.
  5. Add the cubed pumpkin and stir to coat with the spices.
  6. Pour in the coconut milk and bring to a simmer.
  7. Cover and cook for about 20 minutes, or until the pumpkin is tender.
  8. Serve hot with rice or naan.
