Crust
- 1.5 cups graham cracker crumbs
- 0.5 cups melted butter
- 0.25 cups sugar
Filling
- 16 oz cream cheese softened
- 1 cup pumpkin puree
- 0.75 cups sugar
- 1 teaspoon vanilla extract
- 3 eggs
- 1 teaspoon pumpkin pie spice
Preheat oven to 350°F (175°C).
Mix graham cracker crumbs, melted butter, and sugar. Press into a baking pan.
Beat cream cheese until smooth. Add pumpkin puree, sugar, vanilla, and pumpkin pie spice. Mix well.
Add eggs one at a time, mixing well after each addition.
Pour filling over crust. Bake for 50 minutes or until set.
Cool completely before cutting into bars.
