Ingredients 

Crust

  • 1.5 cups graham cracker crumbs
  • 0.5 cups melted butter
  • 0.25 cups sugar

Filling

  • 16 oz cream cheese softened
  • 1 cup pumpkin puree
  • 0.75 cups sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1 teaspoon pumpkin pie spice

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, melted butter, and sugar. Press into a baking pan.
  3. Beat cream cheese until smooth. Add pumpkin puree, sugar, vanilla, and pumpkin pie spice. Mix well.
  4. Add eggs one at a time, mixing well after each addition.
  5. Pour filling over crust. Bake for 50 minutes or until set.
  6. Cool completely before cutting into bars.
