Main Ingredients
- 4 large potatoes scrubbed clean
- 2 tablespoon olive oil
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon crumbled
- ½ cup sour cream
- 2 tablespoon chopped green onions
Preheat oven to 400°F (200°C).
Prick potatoes with a fork and bake for 45 minutes or until tender.
Let potatoes cool, then cut in half lengthwise and scoop out the flesh, leaving a ¼-inch shell.
Brush potato skins with olive oil and bake for another 10 minutes until crispy.
Fill each skin with cheese and bacon, then bake for another 5 minutes until cheese is melted.
Top with sour cream and green onions before serving.
