Ingredients

  • 4 large potatoes scrubbed clean
  • 2 tablespoon olive oil
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon crumbled
  • ½ cup sour cream
  • 2 tablespoon chopped green onions

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Prick potatoes with a fork and bake for 45 minutes or until tender.
  3. Let potatoes cool, then cut in half lengthwise and scoop out the flesh, leaving a ¼-inch shell.
  4. Brush potato skins with olive oil and bake for another 10 minutes until crispy.
  5. Fill each skin with cheese and bacon, then bake for another 5 minutes until cheese is melted.
  6. Top with sour cream and green onions before serving.
