Ingredients 

Main Ingredients

  • 4 cups Potatoes, peeled and diced
  • 2 cups Leeks, cleaned and sliced
  • 4 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 2 tablespoon Butter
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the leeks and cook until soft, about 5 minutes.
  3. 3. Add the potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  4. 4. Puree the soup in a blender until smooth. Return to pot.
  5. 5. Stir in the cream and season with salt and pepper to taste. Heat through, but do not boil.
  6. 6. Serve hot, garnished with chives if desired.
