Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 4 large portobello mushrooms stems removed
  • 2 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • ¼ cup fresh parsley chopped

Instructions 

  1. 1. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed.
  2. 2. While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  3. 3. Add the minced garlic and cook for another minute.
  4. 4. Add the portobello mushrooms to the skillet and cook until they are tender, about 10 minutes.
  5. 5. Stir in the cooked quinoa, dried thyme, salt, and black pepper. Cook for another 2-3 minutes until everything is well combined and heated through.
  6. 6. Garnish with fresh parsley before serving.
