Ingredients 

Main Ingredients

  • 2 Portobello mushrooms stems removed
  • 2 tablespoon Olive oil
  • 1 Red bell pepper sliced
  • 1 Red onion sliced
  • 2 slices Bread your choice
  • 2 tablespoon Mayonnaise
  • 1 teaspoon Balsamic vinegar
  • 1 cup Arugula

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Brush the portobello mushrooms with olive oil on both sides.
  3. 3. Grill the mushrooms for about 5-7 minutes on each side until tender.
  4. 4. While the mushrooms are grilling, slice the red bell pepper and red onion.
  5. 5. Toast the bread slices on the grill for 1-2 minutes until slightly crispy.
  6. 6. In a small bowl, mix the mayonnaise and balsamic vinegar.
  7. 7. Spread the balsamic mayo on one side of each bread slice.
  8. 8. Assemble the sandwich by layering the grilled mushrooms, red bell pepper, red onion, and arugula between the bread slices.
