  • 4 large Portobello mushrooms sliced
  • 1 medium Red bell pepper sliced
  • 1 medium Green bell pepper sliced
  • 1 medium Onion sliced
  • 2 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 small Tortillas warmed

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced mushrooms, bell peppers, and onion. Cook until tender, about 8-10 minutes.
  3. Stir in chili powder, cumin, paprika, garlic powder, salt, and black pepper. Cook for another 2-3 minutes.
  4. Serve the mushroom mixture in warmed tortillas. Enjoy!
