Ingredients 

Main Ingredients

  • 4 large portobello mushrooms
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 8 slices fresh mozzarella
  • 2 large tomatoes sliced
  • Fresh basil leaves
  • Balsamic glaze

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Clean mushrooms, remove stems, and brush with olive oil. Season with salt and pepper.
  3. Place mushrooms on a baking sheet, gill side up. Bake for 10 minutes.
  4. Remove from oven, layer with mozzarella and tomato slices.
  5. Return to oven and bake for another 5 minutes, until cheese melts.
  6. Top with fresh basil leaves and drizzle with balsamic glaze before serving.
