Ingredients

  • 1 lb Pork tenderloin
  • 1 cup Polenta
  • 2 cups Chicken broth
  • 1 cup Milk
  • 2 tablespoon Butter
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Season the pork tenderloin with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Sear the pork on all sides until browned.
  4. Transfer the skillet to the oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  5. In a saucepan, bring chicken broth and milk to a boil. Gradually whisk in polenta.
  6. Reduce heat to low and cook, stirring frequently, until polenta is thick and creamy, about 15 minutes.
  7. Stir in butter and season with salt and pepper to taste.
  8. Slice the pork tenderloin and serve over polenta.
