Ingredients

  • 1 cup Basmati rice uncooked
  • 1 cup Pomegranate seeds
  • 1 cup Cucumber diced
  • ¼ cup Red onion finely chopped
  • ¼ cup Fresh mint leaves chopped
  • ¼ cup Fresh parsley chopped
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black pepper freshly ground

Instructions 

  1. 1. Cook the basmati rice according to the package instructions. Let it cool.
  2. 2. In a large mixing bowl, combine the cooked rice, pomegranate seeds, cucumber, red onion, mint leaves, and parsley.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  4. 4. Pour the dressing over the rice mixture and toss gently to combine.
  5. 5. Serve immediately or chill in the refrigerator for 30 minutes before serving.
