  • 2 cups cooked pinto beans
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 clove garlic, minced
  • 8 pieces small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • ½ cup sour cream
  • ½ cup shredded cheese

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the minced garlic and cook until fragrant, about 1 minute.
  3. Add the pinto beans, ground cumin, and chili powder. Stir to combine and cook for 5-7 minutes, until heated through.
  4. Warm the corn tortillas in a separate skillet or microwave.
  5. Assemble the tacos by placing a spoonful of the bean mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, sour cream, and shredded cheese.
  6. Serve immediately and enjoy!
