  • 1 can Pinto Beans drained and rinsed
  • 1 loaf Baguette sliced
  • 2 tablespoon Olive Oil
  • 1 clove Garlic minced
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Lemon Juice freshly squeezed

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Place baguette slices on a baking sheet and brush with olive oil. Bake for 10 minutes or until golden and crisp.
  3. In a mixing bowl, combine pinto beans, garlic, salt, pepper, and lemon juice. Mash slightly with a fork.
  4. Top each baguette slice with the pinto bean mixture. Serve immediately.
