Ingredients

  • 1 can Black Beans drained and rinsed
  • 1 cup Pineapple diced
  • 1 unit Jalapeno diced
  • 1 unit Red Bell Pepper diced
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 4 unit Tortillas large
  • 1 cup Cheddar Cheese shredded
  • 1 tablespoon Olive Oil

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat.
  2. 2. Add diced jalapeno and red bell pepper. Cook until softened, about 5 minutes.
  3. 3. Stir in black beans, pineapple, cumin, and chili powder. Cook for another 5 minutes.
  4. 4. Warm tortillas in a separate skillet or microwave.
  5. 5. Spoon the black bean mixture onto each tortilla. Top with shredded cheddar cheese.
  6. 6. Roll up the tortillas and serve warm.
