Ingredients 

Main Ingredients

  • 2 cups Cooked chicken, shredded
  • 1 cup Pineapple chunks, drained
  • 2 cups Shredded cheese (cheddar or Mexican blend)
  • 8 large Flour tortillas
  • 1 tablespoon Olive oil

Instructions 

  1. 1. Heat a skillet over medium heat and add olive oil.
  2. 2. Place one tortilla in the skillet and sprinkle with ¼ cup of cheese.
  3. 3. Add ½ cup of shredded chicken and ¼ cup of pineapple chunks on top of the cheese.
  4. 4. Sprinkle another ¼ cup of cheese on top and cover with another tortilla.
  5. 5. Cook for 2-3 minutes until the bottom tortilla is golden brown, then flip and cook the other side.
  6. 6. Remove from skillet and repeat with remaining ingredients.
  7. 7. Cut into wedges and serve warm.
