Ingredients 

Main Ingredients

  • 1 cup Quinoa
  • 2 cups Water
  • 1 bunch Chard stems removed and leaves chopped
  • ½ cup White Vinegar
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 1 tablespoon Olive Oil
  • 1 unit Avocado sliced

Instructions 

  1. Rinse the quinoa under cold water.
  2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes.
  3. In a mixing bowl, combine the white vinegar, sugar, and salt. Add the chopped chard and let it sit for at least 10 minutes.
  4. Fluff the cooked quinoa with a fork and divide it into bowls.
  5. Top each bowl with pickled chard, avocado slices, and a drizzle of olive oil.
