Pesto Pasta With Cherry Tomatoes

Main Ingredients
- 400 g Pasta
- 200 g Cherry Tomatoes halved
- 1 cup Fresh Basil Leaves
- ½ cup Parmesan Cheese grated
- ¼ cup Pine Nuts toasted
- 2 cloves Garlic
- ½ cup Olive Oil
- to taste Salt
- to taste Black Pepper
1. Cook the pasta according to the package instructions. Drain and set aside.
2. In a blender, combine basil leaves, Parmesan cheese, pine nuts, garlic, and olive oil. Blend until smooth to make the pesto.
3. In a pan, heat a little olive oil over medium heat. Add the cherry tomatoes and cook until they start to soften.
4. Add the cooked pasta and pesto to the pan with the cherry tomatoes. Toss to combine. Season with salt and black pepper to taste.
5. Serve immediately, garnished with extra Parmesan cheese if desired.
