Peruvian Rice and Chicken

Ingredients 

Main Ingredients

  • 4 pieces Chicken thighs bone-in, skin-on
  • 1 cup Rice
  • 1 cup Cilantro chopped
  • 1 cup Chicken broth
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Vegetable oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions 

  1. 1. Season the chicken thighs with salt and pepper.
  2. 2. Heat oil in a large pot over medium heat. Brown the chicken thighs on both sides. Remove and set aside.
  3. 3. In the same pot, sauté the onion and garlic until translucent.
  4. 4. Blend the cilantro with the chicken broth until smooth. Add to the pot.
  5. 5. Add the rice to the pot and stir to coat with the cilantro mixture.
  6. 6. Place the chicken thighs on top of the rice. Cover and cook on low heat for about 30 minutes, or until the rice is cooked and the chicken is tender.
  7. 7. Serve hot and enjoy!
