Ingredients 

Main Ingredients

  • 1 whole Chicken cut into pieces
  • 2 cups Rice
  • 1 cup Green Peas
  • 1 cup Carrots diced
  • 1 cup Red Bell Pepper diced
  • 1 bunch Cilantro chopped
  • 1 medium Onion chopped
  • 3 cloves Garlic minced
  • 2 tablespoon Aji Amarillo Paste
  • 3 cups Chicken Broth
  • 2 tablespoon Vegetable Oil
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Heat oil in a large pot over medium heat. Add chicken pieces and cook until browned on all sides. Remove chicken and set aside.
  2. 2. In the same pot, add onions, garlic, and aji amarillo paste. Cook until onions are translucent.
  3. 3. Add rice to the pot and stir to coat with the onion mixture. Cook for a couple of minutes.
  4. 4. Add chicken broth, chicken pieces, peas, carrots, and bell pepper. Bring to a boil.
  5. 5. Reduce heat to low, cover, and simmer for about 20 minutes, or until rice is cooked and liquid is absorbed.
  6. 6. Stir in chopped cilantro and season with salt and pepper to taste. Serve hot.
