Ingredients

  • 2 cups all-purpose flour
  • 1 cup cornstarch
  • 1 cup unsalted butter softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 can dulce de leche for filling
  • ¼ cup powdered sugar for dusting

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and cornstarch.
  3. In another bowl, beat butter and powdered sugar until creamy. Add vanilla extract.
  4. Gradually add the flour mixture to the butter mixture, mixing until a dough forms.
  5. Roll out the dough to about ¼ inch thickness and cut into circles using a cookie cutter.
  6. Place the circles on a baking sheet and bake for 12-15 minutes or until edges are lightly golden.
  7. Let cookies cool completely. Spread dulce de leche on one cookie and sandwich with another.
  8. Dust with powdered sugar before serving.
