Ingredients 

Main Ingredients

  • 300 g Penne pasta
  • 1 Zucchini sliced
  • 1 Red bell pepper sliced
  • 1 cup Cherry tomatoes halved
  • 2 cloves Garlic minced
  • 2 tablespoon Olive oil
  • to taste Salt and pepper
  • ¼ cup Parmesan cheese grated, optional

Instructions 

  1. 1. Cook the penne pasta according to the package instructions. Drain and set aside.
  2. 2. In a large pan, heat the olive oil over medium heat. Add the garlic and sauté until fragrant.
  3. 3. Add the zucchini and red bell pepper to the pan. Cook until they start to soften.
  4. 4. Add the cherry tomatoes and cook for another 2-3 minutes.
  5. 5. Add the cooked penne pasta to the pan. Toss everything together and season with salt and pepper to taste.
  6. 6. Serve hot, topped with grated Parmesan cheese if desired.
