Tart Crust
- 1 ¼ cups all-purpose flour
- ½ cup unsalted butter cold, cut into small pieces
- ¼ cup sugar
- 1 large egg yolk
- 2 tablespoons ice water
Filling
- 4 medium ripe pears peeled, cored, and sliced
- ¼ cup sugar
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
Preheat the oven to 375°F (190°C).
In a mixing bowl, combine flour and sugar. Cut in the butter until the mixture resembles coarse crumbs.
Add the egg yolk and ice water, mix until the dough comes together. Press into a tart pan.
Arrange the pear slices on the crust. Sprinkle with sugar, vanilla extract, and cinnamon.
Bake for 40 minutes or until the pears are tender and the crust is golden.
