Peanut Summer Rolls Recipe

Main Ingredients
- 8 pieces Rice paper wrappers
- 1 cup Shredded carrots
- 1 cup Cucumber, julienned
- 1 cup Red bell pepper, julienned
- 1 cup Fresh mint leaves
- ½ cup Crushed peanuts
Peanut Sauce
- ½ cup Peanut butter
- 2 tablespoon Soy sauce
- 1 tablespoon Lime juice
- 1 tablespoon Honey
- 1 clove Garlic, minced
- ¼ cup Water
1. Prepare the peanut sauce by mixing peanut butter, soy sauce, lime juice, honey, minced garlic, and water in a bowl until smooth.
2. Dip a rice paper wrapper in warm water for about 10-15 seconds until soft. Lay it flat on a cutting board.
3. Place a small amount of shredded carrots, cucumber, red bell pepper, mint leaves, and crushed peanuts in the center of the wrapper.
4. Fold the sides of the wrapper over the filling, then roll tightly from the bottom to the top. Repeat with remaining wrappers and filling.
5. Serve the rolls with the peanut sauce on the side for dipping.
