Ingredients 

Main Ingredients

  • 8 oz soba noodles
  • 1 bunch kale chopped
  • ½ cup peanut butter
  • 2 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 clove garlic minced
  • 1 teaspoon ginger grated
  • ¼ cup water as needed

Instructions 

  1. Cook the soba noodles according to package instructions. Drain and set aside.
  2. In a large pan, sauté the chopped kale until wilted. Set aside.
  3. In a mixing bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, garlic, and ginger. Add water to reach desired consistency.
  4. Toss the noodles and kale with the peanut sauce until well coated.
  5. Serve immediately.
