Ingredients

  • 8 oz soba noodles
  • ¼ cup peanut butter
  • 2 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • ½ teaspoon grated ginger
  • ¼ cup water
  • ¼ cup chopped green onions
  • ¼ cup chopped peanuts
  • ½ cup shredded carrots
  • ½ cup sliced bell peppers

Instructions 

  1. Cook soba noodles according to package instructions. Drain and set aside.
  2. In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, garlic, ginger, and water until smooth.
  3. Toss noodles with the peanut sauce until well coated.
  4. Add green onions, peanuts, carrots, and bell peppers. Mix well.
  5. Serve immediately or chill for later.
