Ingredients

  • 8 oz spaghetti or rice noodles
  • ½ cup peanut butter creamy
  • ¼ cup soy sauce
  • 2 tablespoon rice vinegar
  • 2 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha optional
  • 2 cloves garlic minced
  • 1 cup carrots shredded
  • 1 cup cucumber julienned
  • ¼ cup cilantro chopped
  • ¼ cup green onions sliced
  • ¼ cup peanuts chopped

Instructions 

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. In a mixing bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, sriracha, and minced garlic until smooth.
  3. Toss the cooked noodles with the peanut sauce until evenly coated.
  4. Add shredded carrots, julienned cucumber, chopped cilantro, sliced green onions, and chopped peanuts. Toss to combine.
  5. Serve immediately or chill in the fridge for a cold noodle salad. Enjoy!
