Ingredients 

Cookie Dough

  • 1 cup Peanut Butter creamy
  • 1 cup Sugar
  • 1 large Egg

Ice Cream Filling

  • 1 pint Vanilla Ice Cream

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine peanut butter, sugar, and egg. Mix until smooth.
  3. Drop spoonfuls of dough onto a baking sheet. Flatten with a fork.
  4. Bake for 10 minutes or until edges are golden. Let cool.
  5. Scoop ice cream onto one cookie and top with another cookie to make a sandwich.
  6. Freeze sandwiches for at least 1 hour before serving.
