Ingredients 

Main Ingredients

  • 2 cups Peaches, diced
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 1 cup Red onion, finely chopped
  • 1 cup Fresh cilantro, chopped
  • 1 tablespoon Olive oil
  • 1 tablespoon Lime juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 8 oz Halloumi cheese, sliced

Instructions 

  1. 1. In a mixing bowl, combine the peaches, cherry tomatoes, cucumber, red onion, and cilantro.
  2. 2. Drizzle with olive oil and lime juice. Season with salt and black pepper. Mix well and set aside.
  3. 3. Heat a grill pan over medium heat. Grill the halloumi slices for 2-3 minutes on each side until golden brown.
  4. 4. Serve the grilled halloumi over a bed of the peach salsa. Enjoy!
